Vanilla rice Protein Muffins
Ingredients: (makes 8-10)

30g NUA Naturals Vanilla Rice Protein

90g Spelt flour
-
2 Ripe Bananas, mashed
-
120g Apple Sauce
-
40g NUA Naturals Coconut Palm Sugar

1 tsp. Cinnamon
-
1 tsp. GF Baking powder
-
½ tsp. GF Baking soda
-
Pinch of Himalayan Salt
Instructions:

Preheat oven 180C and line a baking tray.

In a bowl, mix the bananas, apple sauce, coconut palm suagr, baking powder, and baking soda. Stir the mixture until it gets "fluffy", and set aside.

In another bowl, mix the flour, protein powder, cinnamon, and salt.

Then mix the dry and wet ingredients together. Be sure not to overmix.

Fill 8- 10 muffin paper cups ⅔ full of mixture.

Bake in oven for about 15 minutes. Leave in muffin tin for 5 minutes, then remove and cool.
