Supergreens+ Gazpacho

 

 

 

 

Ingredients:

  • 1/2 – 1 tbsp. NUA Naturals Supergreens +

  • 100g Baby Spinach

  • 1 Cucumber (deseeded & chopped)

  • 2 Cloves of Garlic

  • 1 Avocado (stoned & peeled)

  • 4 Spring Onions (topped & tailed)

  • 200g Dairy Free Yoghurt

  • 2 tbsp. Sherry Vinegar

  • 1 tbsp. Rapeseed Oil or Olive Oil

  • Small Handful of Pea Shoots

  • Small handful of Parley

  • Small handful of Basil

  • Small handful of Mint

  • Ice cubes

 

Instructions:

  • Put all the ingredients, except the oil and pea shoots and ice cubes into a food processor and blend.

  • Add a little water to get the correct ‘soup’ consistency.

  • Taste and add a little more vinegar and season if necessary.

  • Chill for 2-24 hours before serving.

  • To serve, top with ice cubes, pea shoots and oil.
