Supergreens+ Gazpacho
Ingredients:

1/2 – 1 tbsp. NUA Naturals Supergreens +
-
100g Baby Spinach
-
1 Cucumber (deseeded & chopped)
-
2 Cloves of Garlic
-
1 Avocado (stoned & peeled)
-
4 Spring Onions (topped & tailed)
-
200g Dairy Free Yoghurt
-
2 tbsp. Sherry Vinegar
-
1 tbsp. Rapeseed Oil or Olive Oil
-
Small Handful of Pea Shoots
-
Small handful of Parley
-
Small handful of Basil
-
Small handful of Mint
-
Ice cubes
Instructions:
-
Put all the ingredients, except the oil and pea shoots and ice cubes into a food processor and blend.

Add a little water to get the correct ‘soup’ consistency.
-
Taste and add a little more vinegar and season if necessary.
-
Chill for 2-24 hours before serving.
-
To serve, top with ice cubes, pea shoots and oil.
