Quinoa Salad
Ingredients:

140g Cooked Quinoa
-
1 medium beet, roasted and chopped
-
1-2 tbsp. NUA Naturals Coconut oil
-
1 tbsp. Distilled vinegar
-
1 tbsp. Orange juice
-
1 tsp. Honey
-
60g Chickpeas, drained
-
1/4 bunch asparagus, roasted and chopped
-
Salt and pepper
-
30g Cherry tomatoes, sliced
Instructions:
-
In a large bowl, carefully mix together the quinoa, beets, asparagus, chickpeas and cherry tomatoes.

In another bowl, whisk together the coconut oil, vinegar, orange juice, honey, salt and pepper. Pour the liquid mixture over the quinoa mixture, and stir to combine.

Mix the quinoa and vegetables with salt and pepper.

Serve Warm or Cold
