Quinoa Salad 

 

 

 

 

Ingredients:

  • 140g Cooked Quinoa

  • 1 medium beet, roasted and chopped

  • 1-2 tbsp. NUA Naturals Coconut oil

  • 1 tbsp.  Distilled vinegar

  • 1 tbsp. Orange juice

  • 1 tsp. Honey

  • 60g Chickpeas, drained

  • 1/4 bunch asparagus, roasted and chopped

  • Salt and pepper

  • 30g Cherry tomatoes, sliced

 

 

Instructions:

  • In a large bowl, carefully mix together the quinoa, beets, asparagus, chickpeas and cherry tomatoes.

  • In another bowl, whisk together the coconut oil, vinegar, orange juice, honey, salt and pepper. Pour the liquid mixture over the quinoa mixture, and stir to combine.

  • Mix the quinoa and vegetables with salt and pepper.

  • Serve Warm or Cold
