Coconut Whipped Cream

Instructions:

  • Take a can of full fat Coconut Milk (do not use low fat).

  • Place the can in the fridge overnight to make the milk go solid.

  • Just before you make your whipped cream, place a mixing bowl in the freezer for 5 minutes to help keep everything cold.

  • Remove the chilled can from fridge and turn it upside down.(Why flip it upside down? – The liquid that doesn’t harden will now be at the top of the can)

  • Open the can and pour the liquid part into another bowl. (Use this liquid for other uses like smoothies!)

  • Scoop the coconut cream into your chilled bowl.

  • Whip the cream until fluffy.

  • Add in a touch of agave (2-3 tsp.) and vanilla powder and whip it again.

  • Voila, a delicious whipped cream without the dairy!

  • Use over desserts or as a cupcake frosting.
