Coconut Cookies
Ingredients:

35g Chickpea flour

35g Brown Rice Flour
-
30g NUA Naturals Coconut flour
-
40g Shredded coconut
-
55g NUA Naturals Coconut oil
-
60ml NUA Naturals Agave Nectar
-
120ml Lemon juice
-
1 tsp. GF Baking powder
Instructions:

Preheat oven to 180ºC.

In a large bowl mix together the flours, shredded coconut and baking powder.

In a separate large bowl mix together room temperature coconut oil, agave, and lemon juice.

Combine the wet and dry ingredients into a dough.
-
Roll cookie dough into balls 1-inch balls, place on parchment paper, and flatten.

Bake for 12-15 minutes until edges are a golden brown.

Remove from oven, let cool and enjoy!
