Coconut Cookies

 

 

 

Ingredients:

  • 35g Chickpea flour

  • 35g Brown Rice Flour

  • 30g NUA Naturals Coconut flour

  • 40g Shredded coconut

  • 55g NUA Naturals Coconut oil

  • 60ml NUA Naturals Agave Nectar

  • 120ml Lemon juice

  • 1 tsp. GF Baking powder

 

 

 

 

 

Instructions:

  •  Preheat oven to 180ºC.

  • In a large bowl mix together the flours, shredded coconut and baking powder.

  • In a separate large bowl mix together room temperature coconut oil, agave, and lemon juice.

 

  • Combine the wet and dry ingredients into a dough.

  • Roll cookie dough into balls 1-inch balls, place on parchment paper, and flatten.

  • Bake for 12-15 minutes until edges are a golden brown.

  • Remove from oven, let cool and enjoy!
