Cacao & Cranberry Courgette Bread

 

 

 

Ingredients:

  • 1 Raw Courgette (shredded)

  • 120g GF flour

  • 1 tsp. GF Baking soda

  • 1/4 tsp. GF Baking powder

  • 1/2 tsp. Cinnamon

  • 1/4 tsp. Allspice

  • Pinch of Salt

  • 60g NUA Naturals Cacao powder

  • 1 Banana

  • 110g NUA Naturals Coconut Palm sugar

  • 110g NUA Naturals Coconut oil (melted)

  • 1/2 tsp. NUA Natuals Vanilla Powder

  • 60g  Dried Cranberries

 

 

Instructions:

  • Preheat oven to 180° C.

  • Grate the zucchini and set aside.

  • Mix the flour, cacao, baking soda, baking powder, salt, and spices in a separate bowl and set that aside.

  • Mash the banana with the sugar, coconut oil, and vanilla.

  • Fold in the grated zucchini. Stir in the dry ingredients and then mix in the dried cranberries at the end.

  • Pour the batter into a lightly greased bread loaf pan and bake for 40 to 50 minutes, or until a toothpick inserted comes out clean.
