Cacao & Cranberry Courgette Bread
Ingredients:

1 Raw Courgette (shredded)

120g GF flour

1 tsp. GF Baking soda

1/4 tsp. GF Baking powder

1/2 tsp. Cinnamon

1/4 tsp. Allspice

Pinch of Salt
-
60g NUA Naturals Cacao powder
-
1 Banana
-
110g NUA Naturals Coconut Palm sugar
-
110g NUA Naturals Coconut oil (melted)
-
1/2 tsp. NUA Natuals Vanilla Powder

60g Dried Cranberries
Instructions:

Preheat oven to 180° C.

Grate the zucchini and set aside.

Mix the flour, cacao, baking soda, baking powder, salt, and spices in a separate bowl and set that aside.

Mash the banana with the sugar, coconut oil, and vanilla.

Fold in the grated zucchini. Stir in the dry ingredients and then mix in the dried cranberries at the end.

Pour the batter into a lightly greased bread loaf pan and bake for 40 to 50 minutes, or until a toothpick inserted comes out clean.
