Acai & Berry Cheesecake

 

 

 

 

Ingredients:

Base

  • 170g Soaked Almonds

  • 170g Dates

  • 120g Dessicated Coconut

  • 1-2 tbsp NUA Naturals Chia Seeds

Filling

 

 

 

Instructions:

  • Place all base ingredients in a food processor and blend for five minutes.

  • Place ingredients in a lined 10” cake tin.

  • Press down firmly and evenly in the cake tin, and place in the freezer for 1 hour.

  • For the filling, place cashews, agave, Acai, water, vanilla and mixed berries in a food processor and blend well for 5 to 10 minutes until creamy.

  • Add the coconut oil and blend for another 2 mins.

  • Scrape all ingredients into the the cake tin and freeze for 1 hour.

  • After an hour top with raspberries and freeze over night.

Topping: decorate with Organic raspberries and sprinkled with pistachios if desired.
