Acai & Berry Cheesecake
Ingredients:
Base

170g Soaked Almonds

170g Dates
-
120g Dessicated Coconut
-
1-2 tbsp NUA Naturals Chia Seeds
Filling
-
680g Soaked Cashew nuts
-
220g NUA Naturals Coconut oil, melted
-
200ml NUA Naturals Agave Nectar
-
150g Mixed Berries
-
30g NUA Naturals Acai powder
-
120ml Water
-
2 tsp. NUA Naturals Vanilla Powder
Instructions:

Place all base ingredients in a food processor and blend for five minutes.

Place ingredients in a lined 10” cake tin.

Press down firmly and evenly in the cake tin, and place in the freezer for 1 hour.

For the filling, place cashews, agave, Acai, water, vanilla and mixed berries in a food processor and blend well for 5 to 10 minutes until creamy.

Add the coconut oil and blend for another 2 mins.

Scrape all ingredients into the the cake tin and freeze for 1 hour.

After an hour top with raspberries and freeze over night.
Topping: decorate with Organic raspberries and sprinkled with pistachios if desired.
